29Discover a ham that is the only one of its kind in the world. 5J ham from thoroughbred Iberian pigs is fattened on acorns. These hogs are raised in the meadows of the Iberian Peninsula and feed on acorns during the period known as the “Montanera”, when they are allowed to roam over the mountains. The ham-making process involves the ham being cut with the characteristic V, salted, dried and slowly cured in the drying rooms. The Sánchez Romero Carvajal Ham Master ensures that each step of the process is correctly applied to each joint.
